When it comes to culinary destinations in the US state of Atlanta, Georgia is not a name that often comes to mind. However, the rapidly growing Vietnamese community here is creating a vibrant culinary scene for the city.

THE HISTORY AND EVOLUTION OF PHO: A HUNDRED YEAR’S JOURNEY

Among all the Vietnamese dishes that came to the attention of the people in the western hemisphere, nothing else has received such tremendous acceptance as pho. Pho is considered as national dish of Vietnam, and it has captured the fascination of so many people in the west because of its deceptive simplicity and its complex flavors.

Pho is the perfect comfort food  – warm, hearty and deliciously refreshing. In Vietnam it’s the common people’s food. It’s street food. Pho can also be seen as a mirror that reflects Vietnamese history of pho can read as a parallel to the history of its country of origin itself in the last hundred years.

The special thing about the pho at his restaurant is that it is cooked according to his mother’s recipe. First, the beef bones are boiled for 15 minutes to clean them, then washed and simmered for 16 hours, skimming off the foam to make the broth clear. Next, the beef is put into the pot of broth and cooked for 3 hours, then removed and star anise, cinnamon and other spices are added. About 5-10 minutes later, the kitchen is filled with aroma. “We can feel the love in pho”.

Many Vietnamese restaurant and eatery owners in Georgia have become the keepers of traditions and memories, the depth of Vietnamese cuisine and culture through many generations. The history of Pho stretches only a hundred years back in Vietnam’s recent past. But just as  those hundred years have shaped Vietnam into the country it is today, so do those hundred years have shaped the way pho has become.
